I am confused by this Origin pre-order thing for Star Wars: The Old Republic. When you pre-order, are you guaranteed a copy when it launches?

But how much later? "Later" as in, "When the game's about to launch", or sometime in the near future?

First 500,000 orders are guaranteed. Doesn't matter much, anyway. The CE is sold out.

game.co.uk still has copies of the CE. They are however sending out Headstart codes in batches - not instantly like Amazon was.
