I made jambalaya for my Mum's birthday dinner today. I doubt it was authentic but it was really tasty and it's a complete nightmare thinking of meals my brother will eat as the list of ingredients he doesn't like is a lot longer than the one he does.

 

I also made a key lime pie - though I know that wasn't authentic as a proper one is made with lime curd and I basically made a lime mousse on top of a ginger nut base. This version is a lot lighter and more refreshing though. I have made lemon curd in the past and it is rather delicious compared to the shop bought stuff - definitely worth the effort if you're making a lemon meringue for example.

Had some vegetarian Vietnamese food not too long ago. I was pleasantly surprised then again I am used to eating tofu products. There is a sort of "What you expect, what you get" shock/mismatch going on. It helps to see the "meat" as just tofu. It will make the texture of them easy to deal with.

Steak because I felt like it and yes, a college student can afford it... with some help.

 

As I said in the status update... its not great but its passable. Fat is non existent, even though there were a decent amount before cooking. So its sort of unfavorable. Good thing I put some rosemary with salt and pepper on it.

 

I got three more of these guys in the freezer so time to experiment with making them good.

I'd been hankering after steak for a while. Since my mum lives not far from a combi abattoir-wholesale foods place I got some rump steak (proper fillets were £22.50/kilo and I wasn't that confident in my cooking skills) and some vegies alongside it. It turned out pretty fucking sweet. You can just see from the top of the image peeking through how I like my steak :D

You know your food has to pass by an abattoir regardless right? This just cuts out the middleman. They have a cafe on the end too. If there was space they could even add like a petting zoo of sorts on the other end. You arrive, pet the cow n feed it some hay, go into the shop part, pick up some burgers then go and finish off with a steak and ale pie n chips.

They also sell eggs by the gross, and not many places do.

A few fine local eateries if anyone is ever in the Inland Empire:

  • Flo's - Amazing biscuits and gravy served on hash browns with a side of eggs. Total bill comes out to about $7/plate including a beverage.
  • Donut Club - Typical Chinese mafia-owned little donut shop. 6" sub, any donut, bag of chips, large drink for $5.25 no tax.
  • Centro Basco - Awesome Basque restaurant. $20/head family-style supper weekends only, 7:30 PM sharp when they ring the bell or you don't get served. Lunch is $15 at noon. Unlimited wine and massive amounts of food.
  • The Back Abbey - Fantastic Belgian and world beer and the best burger around. Pricey but worth it.
  • Heroes & Legends - Pub with a great fish & chips menu item and good beer on tap. Love the atmosphere here.

I'm sure there are more that I'm forgetting or that are a little bit of a trip to get to... Roscoe's Chicken & Waffle comes to mind. Then of course we've got the decent fast food joints like In-N-Out, Five Guys, The Habit, Chipotle, etc.

Made some shortbread today which is my very favourite biscuit. Half with chocolate chips and half without. Had a warm one while it was still soft and another after it had cooled and gone crumbly. Both gorgeous even if I do say so myself.
