I guess it's just easier to animate a static object that has simplistic movements so they use the excuse of LEGO to have, relative to full CGI films/tv shows, lazy animation. All of those movie/TV Lego blocks move like wet noodles, so the end result is that people and everyday items have a weird aesthetic rather than a physical attribute. Stop motion can be rewarding but Lego, specifically minifigs, can be a fucking pain in the ass to do it in. That question would actually be more reasonable because it's not like South Park is specifically made to be based on some construction paper brand.
