Oooh. Was just recommending a couple channels the other day to my geek group. I've got pretty similar to you but I'll add some others:

- Kurzgesagt – In a Nutshell: So these were who I was recommending since we were playing Timeline and I actually new a bunch of the dates from their recent "Human History" video. They're well animated, with some nice pop culture easter eggs, albeit somewhat biased, informative videos on a bunch of topics on science and politics (and the overlap).

- The Tommy Edison Experience: I started following this guy back when he was "Blind Film Critic", which he still does now and then. A pretty upbeat and funny guy talks about his life and day to day experiences as a blind guy. He answers questions, does challenges (e.g drawing, lego building, guessing 3D printed objects etc). Some things you don't wholly think about. e.g him using Instagram. (oh they all have "post credit" bits btw, but the credits is like two people so you'd have to be quick on the close button to not see them)

- Ahoy: So I'm pretty sure the guy who narrates these does narration for like "How it's made" n other Discovery type stuff. Anyway it's a video game channel. Mostly of late covering weapons in video games in both how they are historically important IRL and how they implemented in video games in story and mechanics. They're pretty well made videos, like you could see them being on Discovery for example (which once again, the voice really helps sell that).

- No Small Parts: A film related one (I follow many). This one looks at actors themselves, specifically character actors (though a couple have lead roles). They're well done mini-documentaries, and heck he had Crispin Glover even ring up and thank him for the video on him so that's cool. My fave is his one on Vincent Schiavelli, which gives a clue into how in-depth he goes with his research. He's also done a few shorter ones for IMDB, mainly around more popular franchises (i.e Star Wars, GoT and Westworld).

- Kaptainkristian: Similar to Nerdwriter  I guess. Covers a chunk of pop culture stuff in neat ways, and a lot of it focused around 90's pop culture so all quite appealing to our demographic.

Far few others, as mentioned mostly film but I imagine many of you already have the likes of Every Frame a Painting and what not in your sub list, and likely don't care too much to follow ILM and Imageworks and such for breakdowns. I'll throw out PS Access I guess since they're decent to follow for their weekly release stuff if you're wanting a quick way to keep up with what's out on PS4, and Robs lists are kinda fun too with their little in-jokes n what not. The odd lets plays too to follow. Oh and PSVR footage which I don't follow but might appeal to those of you with one.

I will add that it's a bit unfair to list Cinefix as "top 10 lists" as that's kind of the stuff you get with lower effort channels. Their's is a bit more thought out and explains the film process a bit more. And rarely actually 10 so no strained lists. Also not quite "top 10" either as many are just "6 examples of silence" rather than "the best use of silence".

Techmoan: Primarily HiFi audio and retro tech channel. His audio related stuff is the bee's knees. He also like Muppets and frequently end his videos with a short skit.

The 8-Bit Guy: Retro tech from early 2000s and older. He has quite the collections of retro computers and music equipment (his 8-But Keys channel).

Lazy Game Reviews: I'm here mainly for the retro tech. He recently unboxed a sealed IBM PC which was neat as hell. It even has a NEW Model M keyboard!

bigclivedotcom: Electronic break tear down. You'll learn how things you use everyday are put together and why they might be potentially crap or even dangerous.

Matthias Wandel: Woodworking guy who is just amazing. He can be quite snarky though but his actual content is great.

Real Engineering: Explains the engineering aspects of various things in our world.

Practical Engineering: Same as above but more stuff we see and hear about.

Bruva Alfabusa: If the Emperor had a Text to Speech Device. Need to say more?

3Blue1Brown: Math related channel who explains things really well and visually too!

Forgotten Weapons: Firearms related channel that well, looks at older weapons. There's some really neat stuff here.

hickok45: Firearms related channel of an old guy who like guns. He's kind of well known and he gets to try out some nice stuff.

HaleyStrategic: Firearms related channel for how to up your game safely and efficiently, if you are into that sort of stuff. More instructional so more serious than others but they do have a sense of humor.

Sometimes these guys and others produce enough content for quite a long session of Youtube from Monday to Friday.

Heri Joensen Guitarist/vocalist/frontman of Tyr, he talks about music theory, composition, song structure and writing, and other stuff, really cool. :P

My overall favorite channel has to be RedLetterMedia. They're mostly known for the 70mins review of The Phantom Menace from a few years back but they have a pretty strong line-up of shows these days. Half in the Bag is where they review new releases. Best of the Worst has them watching 3 bad movies and have a panel discussion about them. It's by far their best and most entertaining show. They often mix things up by having guests or gimmick episodes, too. And last year they started re:View, which is just a way for them to talk about whatever movie they feel like talking about. Sometimes it's a classic or favorite of theirs, other times it's something terrible, basically anything that doesn't fit into the other two shows. They also have a game-centric series/channel called Previously Recorded but I'm honestly not a huge fan of it.

As for gaming themed channels, these would be the best ones I watch:

Super Bunnyhop: This is probably my favorite gaming channel. He mainly does your typical reviews of new releases but also does the occasional video essay and semi-journalistic content. He was the first one to provide some insight into the whole Kojima/Konami situation, IIRC. He's also a pretty good reviewer. Even when I disagree with him, he still tends to argue his points well enough that you can always see where he's coming from.

Matthewmatosis: Also mainly a review channel but he rarely does new releases and mostly focuses on gameplay mechanics. He's done long form series reviews of all the 3D Mario and Zelda games as well as the Metal Gear Solid series. Pretty good stuff.

Errant Signal: This is more of a "literary criticism" kinda deal and tends to focus on lesser known indies and artsy fartsy stuff. He's more interested in exploring what a game is saying through its mechanics and systems rather than how good or bad they are.

Game Maker's Toolkit: Another analysis channel but this one is strictly about game design. He's recently been looking at the dungeon design of all the Zelda games in the lead-up to Breath of the Wild's release but he also touches on a little of everything and not just level design.

Noah Caldwell-Gervais: This guy also does long form analysis, usually comparing multiple games or going through an entire series. His production value is godawful but his commentary is usually on point. He's also recently started living out of his van and traveling, so he started doing some travel videos as well. It's not the kind of stuff I would've expected to be into but I've been enjoying them so far.

PBS Idea Channel - I'm not sure how to explain this.  Just a show where he explores various philosophical ideas, mostly as relates to popular culture and media.  I love it.

PBS Space Time - A nerd show for nerds, about space and physics and stuff.  It gets a lot more technical than most other physics educational channels.

Extra Credits - A show about game design, mostly targeted at new developers/people trying to get into game dev.  Super interesting.

Tom Scott - A British dude who mostly posts short little videos about random interesting things.

CGP Grey - An American dude living in Britland with random educational videos, mostly about political/cultural stuff.

I will also second Dean's mention of Kurzgesagt.  Excellent channel.

PBS Idea Channel is great. PBS Space Time I thought was great, but after they switched hosts they started getting really technical. As someone who hasn't taken a science class since 2005, it's pretty hard to keep up with. Compare that with It's OK To Be Smart, another PBS channel, which is fun and educational. He's really good at breaking down complex things in ways that anyone can understand.

I discovered a few really good channels over the last year, so I figured a few were worth sharing here.

Binging with Babish: A friend of mine got me into cooking channels and this is the most fun one. He mainly recreates dishes from TV shows and movies but also recently started a series about cooking basics, which has been pretty interesting so far.

Mother's Basement: This is mainly an anime channel with his bread and butter being analyzing OPs and shitting on Sword Art Online. He does the occasional gaming video, though. I initially discovered him because of one he did on Trails in the Sky, which I'm pretty sure I posted before but fuck it, here it is again.

Internet Comment Etiquette with Erik: This is pretty much just a comedy channel about trolling comment sections but it's honestly way more entertaining than it sounds. It's probably my favorite out of all the channels I've started following recently. He mostly does YouTube comments but occasionally he'll venture out to PornHub or Yahoo Answers and the results are always amazing.

And finally, L.A. Beast: I didn't think to post this one last time because I don't really follow it myself so much as a friend of mine links me his videos whenever they come out. He mostly does eating challenges (and got some genuine Guinness records recently) but the real fun happens when he does incredibly stupid shit. Like drinking a 20 year old bottle of Crystal Pepsi, drinking a 24 year old Ecto Cooler juice box or doing highly questionable "science experiments".

Mike Haduck Masonry

Basically this mason from Pennsylvania. You'll learn a ton about masonry.

Tech Ingredients

Tech channel who goes quite into detail on the how and why of the things he does. I think the guy is a professor somewhere out in New England due to the way he talks. Reminds me of some physics and engineering professors/lecturers I've had. Highlights are about sound, drones and lasers.

Technology Connections

Mainly retro tech channel that goes over the history and how things works. I think he's a bit more in-depth than some of the others I've linked.

Edit: I swear Youtube got to get their house in order. I watch a couple of hours each week of videos. They have to be smart on how to support their content creators. Hell, some of their policies are really stupid. One new one is the potential ban of gun related content. Banning Forgotten Weapons and hickok45? Really?

Huh, I never mentioned Tropical Tidbit. He basically summarizes and give insight on tropical cyclones forecasts, mainly hurricanes that affects North and Central America. He's no random whack either since he studies this stuff. His website is an absolute gem and should be used in conjunction with what the NWS, NOAA and NHC puts out. Disclosure: I am a patron of his since his website is just that amazing and can be used for other storms such as winter storms and I think even supercells that spawn tornadoes.

Anyhow, hurricane season is almost upon us with most probable first named storm of the season. Here's his first video for the season.

Binging with Babish is one of my faves. Spent a while dropping what I thought was unsubtle hints about his book, but alas no luck.

I'm currently going through "Techmoan" (which isn't a guy moaning about tech, if anything the opposite) and really enjoying the coverage of some of the older and more obscure music and film formats. Just watched this video on HD-VHS (which preceded both HD-DVD n Blu-Ray)

It's fascinating seeing the various formats, especially when most folks just talk of "Betamax vs VHS" n such. Especially fun to watch with the recent rise in vinyl players.

(he does also review some newer stuff, and I think that's how his channel started)

LockPickingLawyer

He's a fun and horrible watch since he pretty much defeats most locks with ease. Like sure he's a great lockpick but still. Shit's not secure! So choose a good lock, good location and pray that it's enough of a deterrence to would be thieves. Basically this:

I also enjoy procrastinating with youtube a lot :) Here are a couple that really help me to not get any work done

Fact Fiend - Start watching for the crazy facts, stay for the host. Most, if not all, of their facts are completely useless trivia, but OH are they fun facts! The host is someone who hates the entire "Business Side" of youtube with a passion and he doesn't keep that fact a secret. Their show is very amateuristic, which is what makes it so great. If you are in doubt I highly recommend watching their Colonel Sanders episode.

ProJared Plays - A lot of people know ProJared from his game reviews, but he's also an incredible let's player. I especially like the videos where he plays trading card games. Both his Magic: Shandalar and pokemon TCG let's plays are good series to start with. If that's not your thing I would like to recommend his Final Fantasy 1 series.

Door Monster - These dudes make funny sketches. Most of their sketches are based on video games. What I think categorises them the most are their brilliant punch-lines.

Internet Comment Etiquette - Ah yes, Erik. His whole thing is making "Turorials on how to properly comment on video's". As you might expect he isn't very serious. This is an awesome channel with an awesome concept that is too difficult to explain.

I hope you'll find them enjoyable :)

De mi Rancho a Tu Cocina

Watch as a Mexican grandma shows you how to cook the old fashion way. Most videos has subtitles so you can follow along but you probably don't really need it. While I haven't made anything from her yet but I think I will soon (probably the one linked below). Thing to note: you and I will probably never have hands of iron as she has.

Kruggsmash

I usually don't do what amounts to a Let's Play but Krug plays, illustrates and narrates his Dwarf Fortress sessions. I cannot recommend him enough. Some forts/series can be short (one or three episodes) or looong like 28+ episodes (it's seriously stopping me from watching Jojo or Demon Slayer). Each episode is about 30 minutes long that comes out every Thursday.

It has to be said too that Krug doesn't just plays but weaves stories into his sessions. You'll root or hate certain characters and be deeply entertained by whatever situations he decides to cook up. Here's the most recent short fort that probably going to turn into a long fort.

The premise of this fort is an isolated fort full of scholars in a undead tundra that rains yellow goo. Any dead thing, unless mangled, comes back to life as zombies. He essentially made a Fallout Shelter and he's in the process of finally breaking back out to the surface so he can trade. Problem is that path to his dwarfs causes all the undead to swarm the entrance.
